Hello,
I am in the middle of the akward stage and I am wondering
is there any hairstyles I can use to make my hair look slightly more
appealing until its long?

It is possible. But you have to be very fortunate and have a hairdresser who will follow orders. When you say 'trim', the conservative haircutter may say to herself, "He'd look sooo much better my way." You know the story.
I suggest you just let it be. It's only two years. For two years investment you get a lifetime (or at least the lifetime of your hair) of what you want.

Well my mom is going to take me to her hair dresser, which will do as I say, plus he's 40$...any ideas as to what?

I went to an understanding hair stylist when I was growing out my hair. He understood I wanted long hair. He would trim the hair in the back while letting the hair on the sides grow, so that gradually my hair became all one length. One it's all one length, you just let it grow to whatever length you want.
I'm not sure I'd do that again though, because it does take longer that way. You may want to consider not getting it cut at all, but trying more ways style your hair after washing it. See what you can do with a blow dryer and a round brush or flat brush. Be sure to use some product to protect your hair from the heat. If you want to straighten your hair too, hair straightening balm is good for that.
If you had a picture, that would help a lot for giving you advice.
