I want to grow long hair

Hello,
I am 17 years old and I want to grow my hair longer. A little less than shoulder length I suppose. Not that it's the reason I want to do it, but the same style/look/length as Kurt Kobain had just as a waypoint.
I have dark THICK hair. My question is, what can I do to grow my hair without it getting to look like a bush in the mid stages. Undercuts? I don't much care for them but I suppose it's a possibility.
Currently I shaved my head short, then let it grow for months. I have a natural cow-lick on one side of the front. My sides just go over my ears and my bangs about 1/2" from my eyebrows (on one side - other cowlick).
Another thing, I don't like how when I get out of the shower, my hair "poofs" up and out because of it's thickness, so I've started gelling to counter that. Is there something else I can do to avoid the gel?
