I have heard that if you have only moderately curly hair when it is short that when it gets "long" (like past the one and a half year mark) it will be wavy, not curly. What about cowlicks? the hair on my sides is straight but the top (and this is at six months) is a bit curly, especially the bangs which are in spirals right now.

It's true. And the cowlick will look good, consider it a blessing that you have one.
