solution for dry hair?

I can never seem to get my hair texture right. I'm aiming for hair like Johnny Depp's (think Benny and Joon, or more recently, Chocolat) -- fairly moist looking and shiny, with thick strands and some real body, but not exactly greasy looking. I have thick brown hair with some curl in it, but when I wash it with regular shampoo and conditioner, it just looks sorta dull, dry, and frizzy, and its impossible to control, just sorta laying down on my head like a mat of hair. I go a few days without washing, and next thing I know, its an oily mess. It's lost all its curl, and now it just causes me to break out. There's never a good in-between stage. Do I need some stronger conditioner, better shampoo, some sort of product, or what?

Also, does anyone know what women do to their hair that makes it look different? Most guys I know have similar looking hair, it seems a lot drier and duller than the average girl's. Women (at least young ones) never seem to have much problem getting their hair to look shiny and moisturized without the greasiness. Is this just a fundamental different between the sexes' hair, or do they know something we don't?

Thanks.
