What is layering?

I have long, just past shoulder legnth hair--I usually get it cut every six months to keep it at just past the shoulder. I like to wear my hair either tied back or in top knot. Everytime I go to the "salon" they ask me if I want to have it layered. I have no clue what that is...so I just say I want it just long enough so that I'm able to tie it back..
The last time I went, I was rather frustrated for about a month because the stylist cut it the same legnth down the sides and the front hair would slip out of the pony tail while the previuous time another styalist who cut my hair left it just a bit longer in the front so that I would be able to that it would all be tamed. (My fault really, he asked me four times if I was sure about the legnth and I that it was a shame to cut so much off, but I persisted.)
I want to wear my hair down more, but I don't care for that because the slightest breeze and I have a big frizzy mess. (And it's 100F here in the summer.) It's getting close to the time for the six month trim. I was wondering if layering would take care of these problems... and what it looked like for men..and how is it when it grows out if I don't like it? (I think it's something that requires regular trimming?)
Thanks for the help.

If I were you, I wouldn't get layers...they are a pain in the butt because your hair would be falling out of your ponytail and all that nonsense. Plus they look too girly for most men. If you still want to know what they are, they basically take the top later of the hair and cut it shorter than the rest of the hair, and then graduate downwards.
Erm, by the way, you might want to consider six WEEK trims if you can afford it. It's much less traumatic to have lots of little trims than to have an inch hacked off after a few months. If you have split ends for six months, they will begin to travel up the hair shaft and you will need to have more cut off.
