Question about shampoos

I was wondering, say you use a shampoo with alcohol or sulfates in it but then later on you switch to something that has neither of it. Is your hair still damaged from using the alcohol? I've been experimenting with a lot of shampoos and conditions and so far Paul Mitchell seems good with me. But my hair tends to feel sort of try at times and can get the whole frizzy deal when I go outside. Maybe that's common though.
Also can anyone recommend any good herbal like shampoo/condition for hair that gets oily real easily, washes the scalp good, and makes your hair have that less frizy, soft, and silky look to it? (If I'm being farfetched let me know, this is the first time I've tried growing out and taking care of my hair!). Any help would be appreciative!

I don't know about others - because everyone's hair and body chemistry is different - but for me, I simply make sure that both the shampoos and the conditioners I buy are "moisture rich". I was also told by my hairdresser to buy products for "permed and color treated hair" for the simple reason that these products will have an abundance of moisture in them due to the fact of how damaging to your hair perms and color treatments are. She also told me of a product made by Redken called "glass" - it's kind of a smoothing treatment. I use it from time to time and it does indeed get rid of the "frizzies"...but be careful - you only need a very tiny bit of this stuff because too much will make your hair look oily enough to squeeze it over a skillet and fry up some chicken. I don't know about you guys, but my hair gets washed and conditioned every day - and sometimes twice a day - because I cannot stand to see long, greasy looking hair...it just looks to me like a bad hygiene situation and I don't want no part of that.

I dunno about herbal, but the Physique line is the first stuff I've used thats worth the extra money, and I've used a lot. The stuff doesn't leave any oil slime in my hair like shampoo/conditioner combos do, and its softer than ever. And the effects actually last until the next time I wash, A day or two. After that I don't know because no matter what I use my hair is oily in 2 days, but that beats the hell out of 6-8 hours like with the stuff that leaves your hair slimy. Even their clarify is gentle, and yet still one of the strongest I've used, it removes pomade and wax easily.

This past week, I started using Aussie Moist Shampoo and the Conditioner as well. I have to say, the stuff is great! My hair isn't frizzy at all anymore. It's very manageable and soft now. I love it!

Aussie moist conditioner is great. Haven't tried the shampoo though.
