I am looking for hair salons in Salt Lake City that are sensitive to men who wear their hair long. Would appreciate any info.

In that area you will probably have to just go to salons that are familiar with doing long hair on women. It's not real different. Just discuss it with the stylist before they start.
I don't think that there are a lot of long haired Mormon men but there are a fair number of long hair Mormon women.

I can hardly remember the last time I had my hair cut at somewhere that only did men's hair. That's usually a really bad idea for any guy with long hair, in any city in the world!
