I don't know about dramatic changes in texture such as bone straight hair naturally becoming tightly curled, but slight changes in hair's texture througout life seems common enough.
When I was a child and through my teenage years, my hair was relatively straight and a warm chestnut brown color. By the time I was 16, the color began to darken (naturally) to a deep brown (almost blackish) and it got very wavy. By the time I was 18, my hair's texture hadn't changed much, but I began to get my first gray hairs.
When I was 20, I began coloring my hair because I didn't like the overall darker color it had naturally become, and at that age, I really wasn't ready for the gray that was peeking through. Coloring dried my hair slightly, but didn't change the texture overall or do any damage that I couldn't counteract with proper conditioning and careful handling. In fact, coloring my hair made the gray more manageable.
I'm now 37 and quit coloring my hair several years ago because keeping up with the white "roots" on a monthly basis got to be too much of a chore. I'm about 80% gray overall now, and the texture is much more coarse and less manageable than it was in my teen years and througout my 20s & early 30s when I was coloring it.

Golly, didn't this come up just a few dozen messages back? Yup. My response was here. Won't clutter up the board by posting it again. :-)

Your browser should take note of any previous posts that you read. I guess that many people only read the ORIGINAL posts at the TOP of the board. [Many posts seem to have (0) responses.]

Bill, a little patience...please.
To answer your question, yes. Hair goes through a change every 7 years or so. Texture, thickness, and other qualities do change.

If I had posted the answer again, others would have complained I had already said that and was boring them. ;-) Still, this guy wanted and deserved an answer. By posting just a link I tried to aim for the middle ground. I guess I missed. Nevertheless, I can't help but love you, you're a longhair. :-) Bill

Medications can also change your hair drastically. I was born with red/blond, very curly hair. It stayed that way, lightening up somewhat, for many years. After having a kidney transplant, the immune-suppressant medications I took caused my hair to straighten dramatically. Now that I'm no longer taking those meds my hair has gotten much curlier again.
Yes, hair does change

I was born with very red, very curly hair a la Shirley Temple (it's the Scottish in me I'm told). My brother was the same way. When I turned six years old, my hair darkened somewhat, and the ringlets became waves. This color and waviness continue to this day. Since my brother went through the same change, I would chalk it up to genetics.
